A comforting and flavorful curry made with broccoli and red lentils, enriched with creamy coconut milk and aromatic spices.

- 1 Kopf Brokkoli, in Röschen geteilt
- 200 g rote Linsen, gewaschen
- 1 Zwiebel, gewürfelt
- 2 Knoblauchzehen, gehackt
- 1 Stück Ingwer, gerieben
- 400 ml Kokosmilch
- 2 EL Currypulver
- 1 TL Kreuzkümmel
- Salz und Pfeffer nach Geschmack
- 2 EL Öl zum Anbraten
- Frischer Koriander zum Garnieren
Instructions
- Heat the oil in a large pot over medium heat. Add diced onions and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and grated ginger. Sauté for another minute.
- Sprinkle the curry powder and cumin over the onions, stirring to coat and toast the spices for about 30 seconds.
- Mix in the washed lentils and pour in the coconut milk. Stir well and increase the heat until the mixture boils.
- Add the broccoli florets, reduce the heat, and cover. Let it simmer for approximately 15 minutes.
- Season with salt and pepper to taste.
- Serve the curry in bowls, garnishing with fresh coriander.
Notes
