- 200g Halloumi-Käse, gewürfelt
- 1 rote Paprika, gewürfelt
- 1 Gurke, gewürfelt
- 200g Kirschtomaten, halbiert
- 50g Rucola
- 3 EL Olivenöl
- 2 EL Zitronensaft
- Salz und Pfeffer nach Geschmack
Instructions
- Cook the Pasta: Fill a large pot with water and bring it to a boil. Add a pinch of salt and cook the pasta according to the package instructions until al dente. Drain the pasta, rinse under cold running water, and let it cool.
- Grill the Halloumi: Heat a non-stick skillet over medium heat. Arrange the halloumi cubes in a single layer and cook for about 2-3 minutes on each side until they develop a beautiful golden crust.
- Combine Ingredients: In a large mixing bowl, combine the cooled pasta, grilled halloumi, diced red pepper, cucumber, halved cherry tomatoes, and peppery arugula.
- Dress the Salad: Drizzle the olive oil and lemon juice over the salad. Sprinkle with salt and pepper to taste. Gently toss everything together.
- Serve or Store: Enjoy the salad right away or let it chill in the refrigerator for 30 minutes to allow the flavors to meld.
Notes
