A delicious pasta dish enveloped in a rich and creamy wild garlic sauce, perfect for any occasion.
Ingredients

- 200 g wild garlic
- 2 shallots
- 1 lemon
- 2 tbsp butter
- 1 tbsp flour
- 100 ml white wine
- 200 ml milk
- 150 g cream cheese
- 400 g tagliatelle
- Parmesan for serving
- Salt & pepper to taste
Instructions
- Wash the wild garlic thoroughly, shake off excess water, and chop finely.
- Slice the shallots and set aside.
- Juice the lemon and keep it for later.
- Heat the butter in a large pot over medium heat.
- Add the shallots and sauté for about 2 minutes until translucent.
- Sprinkle the flour over the shallots and cook for another minute.
- Deglaze with the white wine and stir until smooth.
- Pour in the milk and whisk in the cream cheese.
- Simmer the sauce for about 2 minutes.
- Incorporate the chopped wild garlic and blend the sauce until smooth.
- Bring a large pot of salted water to a boil.
- Add the tagliatelle and cook for about 3 minutes until al dente.
- Drain the pasta and let it dry.
- Season the wild garlic sauce with salt, pepper, and lemon juice.
- Toss the tagliatelle in the sauce until well coated.
- Serve the noodles on plates and top with freshly grated Parmesan.
Notes
Feel free to add extra vegetables like spinach or peas for additional flavor and nutrients.
