Description

A delicious pasta dish enveloped in a rich and creamy wild garlic sauce, perfect for any occasion.


Ingredients

Scale
  • 200 g wild garlic
  • 2 shallots
  • 1 lemon
  • 2 tbsp butter
  • 1 tbsp flour
  • 100 ml white wine
  • 200 ml milk
  • 150 g cream cheese
  • 400 g tagliatelle
  • Parmesan for serving
  • Salt & pepper to taste

Instructions

  1. Wash the wild garlic thoroughly, shake off excess water, and chop finely.
  2. Slice the shallots and set aside.
  3. Juice the lemon and keep it for later.
  4. Heat the butter in a large pot over medium heat.
  5. Add the shallots and sauté for about 2 minutes until translucent.
  6. Sprinkle the flour over the shallots and cook for another minute.
  7. Deglaze with the white wine and stir until smooth.
  8. Pour in the milk and whisk in the cream cheese.
  9. Simmer the sauce for about 2 minutes.
  10. Incorporate the chopped wild garlic and blend the sauce until smooth.
  11. Bring a large pot of salted water to a boil.
  12. Add the tagliatelle and cook for about 3 minutes until al dente.
  13. Drain the pasta and let it dry.
  14. Season the wild garlic sauce with salt, pepper, and lemon juice.
  15. Toss the tagliatelle in the sauce until well coated.
  16. Serve the noodles on plates and top with freshly grated Parmesan.

Notes

Feel free to add extra vegetables like spinach or peas for additional flavor and nutrients.
