A delicate and crispy dessert filled with a nut mixture and drizzled with sweet syrup, perfect for any festive occasion.
Ingredients

- 500 g Engelshaare (fine pastry strands)
- 200 g mixed nuts (pistachios, almonds, walnuts)
- 150 g butter
- 200 g sugar
- 100 ml water
- Cinnamon (optional)
- Honey or syrup for serving
Instructions
- Chop the nuts coarsely and mix with cinnamon if desired.
- Separate the Engelshaare and brush generously with melted butter.
- Add a layer of the nut mixture on the pastry and roll carefully.
- Cut the roll into even pieces and place in a buttered baking dish.
- Heat the water and sugar in a pot until syrupy.
- Pour the hot syrup over the arranged rolls.
- Bake at 180 °C for about 30 minutes until golden and crispy.
- Drizzle honey or syrup over the finished dish before serving.
Notes
Make the nut mixture and dough a day in advance for convenience. Osmaliyeh can also be prepared in an air fryer at 160 °C for 20-25 minutes.
