Description

A delicious and healthy baked zucchini dish topped with parmesan cheese, perfect for a side or a light main course.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  3. Drizzle sliced zucchinis with olive oil and toss to coat.
  4. Dip each zucchini slice in the breadcrumb mixture, ensuring it’s fully coated.
  5. Place the breaded zucchini slices on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes until golden brown.
  7. Serve warm and enjoy!

Notes

For extra flavor, you can add herbs like basil or oregano to the breadcrumb mix.
