Description

A creamy and spicy Indian classic, Butter Chicken is a delightful meal that combines tender chicken with a rich, buttery sauce, seasoned with aromatic spices and served with naan and jasmine rice.


Ingredients

  • 1 ½ pounds skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves, chopped
  • 1 medium onion, diced
  • 1 can (15 ounces) tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup fresh parsley, chopped (optional, for garnish)
  • Naan bread
  • Steamed rice

Instructions

  1. Marinate the chicken: In a bowl, mix chicken with salt, garlic powder, paprika, curry powder, and Greek yogurt. Combine well and let it marinate in the refrigerator for at least 15 minutes.
  2. Prepare the sauce: In a large pan, heat vegetable oil and 1 tablespoon of butter. Add garlic and onion, and sauté until fragrant and lightly golden. Stir in tomato sauce, sugar, salt, black pepper, cream, cayenne pepper, garam masala, and curry powder. Let it simmer for a few minutes to combine the flavors.
  3. Cook the chicken: In a separate pan, cook the marinated chicken over medium heat until browned and cooked through.
  4. Add chicken to sauce: Transfer the cooked chicken to the sauce and mix well. Stir in the remaining butter and simmer for a few more minutes.
  5. Serve: Garnish with freshly chopped parsley and serve hot with naan bread and steamed rice.

Notes

You can marinate the chicken a day in advance for more intense flavor. For a lighter version, substitute cream with coconut milk.
